The fermented milk to drink, different variations of cheese and clotted cream fried or cooked in other concentrations of milk... It looked fascinating. Amazing how much variety they could get out of a single ingredient.

They had to. They lived (and many still do) in the middle of open grasslands with nothing but their mares, clothes and weapons. No refrigeration. They could hunt for meat, or gather what few edible plants there are on the steppe, or trade to some extent, and that was it. So they had to be resourceful, and they had to figure out how to make whatever foods they had last as long as possible without going bad.
